- 1 whole chicken
- 2 carrots
- 1 onion
- 2 stalks celery
- 1 parsnip
- 2 cloves garlic
- 1 bay leaf
- salt to taste
- pepper to taste
- fresh parsley for garnish
Instructions
- Start by cleaning the chicken and placing it in a large pot. Add enough water to cover the chicken completely.
- Chop the vegetables and add them to the pot along with the bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer.
- Allow the soup to simmer for about 3 hours, skimming off any foam or fat that rises to the surface.
- Once cooked, remove the chicken and vegetables, strain the broth, and serve hot, garnished with fresh parsley.
