- 1 medium head of cabbage
- 2 carrots, diced
- 1 onion, chopped
- 2 potatoes, diced
- 4 cups homemade broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
- Add diced carrots and potatoes, cooking for about 5 minutes. Stir in chopped cabbage and pour in the broth.
- Season with salt and pepper, bring to a boil, then reduce heat and simmer for 45 minutes until vegetables are tender.
- Let the soup rest for a while to enhance the flavors before serving.
