  • 200g fermented cabbage

  • 1 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. Begin by chopping the pork, beef, and sausage into bite-sized pieces. Dice the onions and mince the garlic.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, sautéing until translucent. Then add the meats and brown them on all sides.
  3. Once the meats are browned, add the regular and fermented cabbage to the pot. Stir in the paprika, black pepper, and salt.
  4. Cover the pot and reduce the heat to low. Allow the bigos to simmer for at least 4 hours, stirring occasionally to prevent sticking.
  5. After cooking, let the bigos sit overnight in the refrigerator to enhance the flavors before reheating and serving.
