- 1 whole chicken (about 3–4 lbs)
- 4 liters water
- 3 large carrots, chopped
- 1 parsnip, chopped
- 1 onion, quartered
- 2–3 sprigs of parsley
Instructions
- Begin by placing the whole chicken in a large pot and covering it with 4 liters of water.
- Add the chopped carrots, parsnip, quartered onion, and parsley to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for at least two hours.
- Skim off any foam that rises to the surface during cooking for a clearer broth.
- Season the soup gradually with salt to taste.
- Once cooked, strain the broth and serve hot, optionally adding noodles or rice.
